1. Preheat the oven to 190°C / 170°C fan forced.
2. For the Apple Filling: peel and core the apples and cut them roughly into 2-3 cm thick pieces. Place them into a shallow dish and toss with cinnamon and sugar until they are fully coated. I use an 23cm x 17cm oval dish for this.
3. For the Crumble Topping: Weigh the flour, butter and sugar into the Thermomix bowl and mix for 15-25 sec/speed 5. (It should look a bit like sand but be careful not to over mix or it will become pastry!)
4. Scatter the crumble mixture evenly over the apples and gently press down with the back of a fork. Sprinkle the oats on top (if using) and bake in the oven for 35-45 minutes until golden brown.

1. Preheat the oven to 180C/350F. Grease a large baking dish and set it aside.
2. In a deep pot or saucepan, melt your butter. Once it is melted, add your chopped chayote and water. Cover the pan and let it simmer for 7-8 minutes, or until tender. Once the squash is tender, add the rest of the ingredients and mix well, until combined. Continue to simmer for a further 3 minutes.
3. Remove the mock apple filling from the heat and transfer it into the lined baking dish. Bake in the oven for 8-10 minutes. While the filling is baking, prepare your crisp topping.
4. In a mixing bowl, add all your crisp topping ingredients and mix well. Remove the baking dish from the oven and sprinkle the crisp all over the top. Place back in the oven and bake for 10-15 minutes, or until the tops are golden brown.

1. Preheat oven to 350°F/180°C. Lightly toast almond flour in a skillet or pan over medium heat, until fully golden and fragrant (2-4 minutes). This is very important taste-wise, so don't skip!
2. Whisk thoroughly together in a small bowl the toasted almond flour, coconut flour, sweetener, cinnamon and salt. Add in butter and rub the mixture with your fingertips until it resembles coarse bread crumbs. Incorporate pecans and set aside.
3. Mix together, in a rimmed baking tray or dish, chayote, sweetener, cinnamon, nutmeg, allspice and lemon juice (starting with 1 tablespoon, tasting and adding more as needed). Add in apple extract, starting with just 1/2 teaspoon, adding more to taste. You can alternatively cook the filling a bit on the stove-top to nail the flavors (my suggestion if doing a mock apple pie!).
4. Top with crumble mixture and bake for 25 to 27 minutes, covering the crumble with foil after 10 minutes to avoid excessive browning.
