1. Trim the fillet and divide into 4 equal portions. Portioning the fish before cooking will produce servings with nice, clean edges. Run your finger gently across the sides of the fish to feel for bones. Remove bones with tweezers by pulling them out through the sides of the fish.
2. Sprinkle all sides, including the skin, liberally with salt and sugar.
