2. Whisk egg whites until stiff, add caster sugar one tablespoon at a time and keep beating until very stiff.
3. Add cornflour, vinegar and vanilla essence then fold together.
4. Spread in a rectangle on a large oven tray and bake for one hour. Turn off oven and leave the pavlova inside to cool. Now prep the berry coulis.
