Then put a pressure cooker on medium flame and let it. When the pan is hot enough, add the chopped spinach and sprinkle salt on it. Pour a little water and cover the cooker with a lid. Let the spinach cook for 2 whistles and remove from flame. When the spinach is cooked, let it cool at room temperature and transfer to a blender. Add green chillies to the jar filled with cooled spinach and coarsely blend them together. Remove the coarsely blended spinach in a bowl and keep aside till required.
2. Now, peel the potatoes and cut them into cubes, wash them thoroughly and put aside. Next, put a saucepan on medium flame and melt ghee in it. When the ghee is hot enough, add the cubed potatoes and let them fry till the colour turns to light brown. When the potatoes are done, transfer them to a bowl. In the same saucepan, after you have transferred the fried potatoes, add cumin seeds, ginger pieces and chopped onions. Saute the onion and ginger till the onions are pink in colour. Now add the chopped tomatoes and cook for about two minutes.
3. When the tomatoes are cooked, add all the spices - cinnamon, garam masala powder, red chilli powder, cumin seeds, clove powder, and fry for another two minutes. Once, the spices leave their aroma and are cooked completely, add the fried potatoes and coarsely blended spinach in the pan. Cook for about a minute or two and sprinkle corn flour in it.
4. Mix the corn flour well with the vegetables and add lemon juice in it and cook for another two minutes. Now, prepare the tempering for the prepared aloo palak. Take a small pan and melt butter in it, and add the asafoetida powder in it, Fry for a few seconds and pour over the prepared aloo palak.
