2. Use a silicone mini muffin pan for the best results with these almond joys. Add 1 teaspoon of the chocolate mixture to the bottom of each section, and then put the pan in the freezer to set the chocolate while making the coconut mixture. There should be about 1/4 of the chocolate mixture left over to drizzle over the tops.

1. Place the semi-sweet chocolate and 1/2 cup of heavy cream in a large bowl and place over a pot of hot simmering water. Let the chocolate melt slowly while frequently stirring to avoid burning. 2. Once the chocolate is melted and the cream is completely mixed in carefully remove the chocolate from the heat and add in the shredded coconut and almonds. Mix well.
3. Spray a baking sheet with cooking spray then line it with parchment paper. Next spread the Almond Joy mixture evenly over the parchment paper and set aside.
4. Follow the same steps to melt the white chocolate for the drizzle as you did for melting the semi-sweet chocolate.
