2. Heat mustard oil in a pan till it begins to smoke. Add cumin seeds, onion seeds and sauté for half a minute. Add turmeric powder and potatoes and stir. Add garlic paste and ginger paste and quarter cup of water and mix.
3. Add the ground spices, salt, black salt and sugar and mix well. Add vinegar and quarter cup of water and cook till dry.
4. Serve hot.

3. Add red chillies, fenugreek seeds, tamarind juice, mustard seeds, water in a grinder and grind them into a smooth paste. Make sure the consistency of the paste is thick.
4. Then, place a saucepan over medium flame and add the grinded paste into the pan. Boil the paste and sprinkle salt into it. Now, add fried potatoes into the pan and cook for few minutes. Garnish and serve!

2. Heat mustard oil in a wide heavy pan or kadai. Add 1 teaspoon cumin seeds and fry for few seconds. Add minced ginger and curry leaves. Saute for a minute.
3. Now add the cut potatoes and mix. Saute and cook in high flame for 2 minutes.
4. Now add 2-3 tablespoons of prepared achari masala powder and 1/4 teaspoon dry ginger powder or sonth and salt to taste. I have also added 1/2 teaspoon red chili powder as we like our achari aloo spicier.
