Sprinkle evenly with kosher salt and let rest at least 15 minutes while you begin the sauce and make the filling. After 15 minutes, brush the salt off with a wad of paper towels and pat dry.
2. In a Dutch oven or large pot, brown sausage, onion, carrots and celery over medium heat. Add garlic and red pepper flakes and cook 30 more seconds. Drain grease.
3. While sauce is simmering, preheat oven to 350 degrees F. Add all of the Ricotta Filling ingredients to a large bowl and mix until combined.
4. To assemble, lightly grease a 9x13 pan. Spread a quarter of the Bolognese sauce on the bottom of the prepared pan (layer will be thin). Top with one third of the zucchini slices in an even layer, overlapping if needed. Spread one third of the ricotta filling over top in an even layer and evenly top with 3/4 cup mozzarella cheese.

4. Preheat a gas grill or grill pan to medium high, and grill 2 to 3 minutes per side, until slightly browned. Place on paper towels to soak any excess moisture.
