DirectionsStep1Get quinoa cooking and cool to room temperate. (Quinoa can also be made ahead of time and refrigerated until ready to use.)Step2Make the vinaigrette: whisk all ingredients together, except the oil, in a small bowl, then slowly drizzle in the olive oil while whisking.Step3Toast fennel and coriander seeds in a cast iron skillet (or any pan will do) and give them a few stirs until they just start to give off their lovely fragrance, about 30 seconds. Grind with mortar and pestle or spice grinder.Step4Rinse and pat dry kale leaves and remove ribs and stems. Place in a large bowl and add the 2 teaspoons olive oil and a pinch salt. Rub the salt and oil in the leaves with your hands to tenderize the kale.Step5Add the cooled quinoa, parsley, apple, scallions, chickpeas, currants, lemon zest and ground spices to the bowl with the kale and toss gently with the vinaigrette.Step6Taste and adjust salt and vinegar, adding more to taste.Step7Options for a heartier salad: top with feta and/or toasted walnuts when serving.Step8Makes about 6 1/2 cupsIngredientsIngredients3 cupsQuinoa (cooked, 1 1/4 cup dry)1 tablespoonFennel Seeds1 tablespoonCoriander Seeds1 bunchLacinato Kale (de-stemmed, cut into one inch pieces)2 teaspoonsOlive Oiladd pinchSalt1 bunchItalian Parsley (flat leaf, rinse and finely chop)1 Large Apple (chopped into small bite sized pieces)2 Scallions (chopped)1 ½ cupsChickpeas (15 ounce can, drained and rinsed, if using canned)⅓ cupDried Currants1 ½ teaspoonsLemon Zest (about 1 medium lemon)0.12 cupLemon Juice0.12 cupApple Cider Vinegar (plus more to taste)1 tablespoonHoney (sub maple syrup for vegan)1 teaspoonMiso Paste (adds depth, richness & probiotics! white, red or brown)¼ teaspoonSmoked Paprika1 teaspoonSalt¼ teaspoonBlack Pepper0.12 cupExtra Virgin Olive OilSee moreNutritionalNutritional327 Calories9 gTotal Fat53 gCarbohydrate384 mgSodium13 gProteinFrom feastingathome.comRecipeDirectionsIngredientsNutritionalExplore furtherApple Kale Quinoa Salad - A Cedar Spoonacedarspoon.comKale, Apple, and Quinoa Salad - Forks Over Knivesforksoverknives.comKale, Quinoa & Apple Salad - EatingWelleatingwell.comWarm Quinoa Salad With Apple and Kale - Happy Healthy …happyhealthymama.comKale and Quinoa Salad - Allrecipesallrecipes.comWinter Kale and Quinoa Salad - Eat Yourself Skinnyeatyourselfskinny.comRecommended to you based on what's popular • Feedback

    1. Preheat the oven to 425ºF. Place butternut squash and fennel on a baking sheet and drizzle with olive oil. Sprinkle with salt and pepper and toss to combine. Roast on the center rack for 35 - 40 minutes until the butternut squash is golden brown and tender, making sure to flip halfway through.
    2. While the vegetables are roasting, add the lentils, broth and bay leaves into a small saucepan. Bring the mixture to a boil, then cover and reduce to simmer for 35 - 40 minutes.
    3. Meanwhile, wash and stem the kale leaves. It's easiest to do this by placing the leaf with the stem facing up and using a small knife to slice the leaves off. Then finely slice the leaves into thin strips. Add to a large bowl.
    4. Using a mandolin slicer, or very sharp knife, finely shred the radicchio and brussels sprouts. Add them to the bowl as well.
