1. Toss the shrimp in the salt and pepper flakes, then heat the avocado oil in a large skillet over medium/high heat. Add in the seasoned shrimp and cook until light pink in color (3-5 minutes) and set aside
2. Add in the sesame oil and all of the veggies (except ginger and garlic) cook for 5-7 minutes until the veggeis are a little tender but still have bite to them. Then add in the ginger, garlic, rice vinegar and coconut aminos. Let cook another 2-3 minutes and stir in the shrimp. Season with salt if needed
3. Remove from heat, top with sesame seeds and green onions
