1. Preheat oven to 350 degrees. Add the butter and sugar to the bowl of a stand mixer and beat until fluffy with the paddle attachment. Add in the ricotta cheese and eggs, vanilla and mix until incorporated.
2. In a medium sized bowl whisk together the flour, baking soda, and powder. Slowly add to the wet ingredients and beat together until combined.
3. Scoop the dough into teaspoons and roll into a ball. Drop on a parchment lined baking sheet. Bake for 8-10 minutes or until just set. Remove onto a wire rack to let cool.
4. In a small bowl whisk together the powdered sugar, milk and almond extract until you get the desired consistency. I like to dip the top of the cookies in the glaze and let them set on parchment paper. Sprinkle with Christmas sprinkles immediately.

1. In a food processor, add the cold butter, sugar, salt, and vanilla extract. Mix at low speed for a few seconds until the butter is all chopped up.
2. Add the egg, flour, and baking powder and mix again for a minute or two until the dough starts coming together.
3. Divide the mix into 2 bowls and in one add the cocoa powder. Knead well with your hands until the dough comes together into a smooth and solid ball. At this point, it shouldn't crumble anymore.
4. Cover both doughs in plastic wrap and flatten it into a disk so it will be easier to roll out.
