1. Pre-heat the oven to 350 degrees. Line a large baking sheet with parchment paper or aluminum foil lightly misted with cooking spray.
2. Break the eggs into a large mixing bowl and beat until smooth. Add the water, melted butter, stuffing mix, Parmesan cheese, garlic powder, onion powder, salt and pepper and stir with a fork until well combined. Add the dry chopped spinach in and stir until thoroughly combined.
3. On a clean surface (I used a cutting mat), divide the mixture into 32 equal piles and roll/form into 32 balls (should be 1 – 1 ½ inch thick). Line the balls up on the prepared baking sheet. Bake for 18-20 minutes until heated through and lightly browned on the bottom.

      1. Preheat oven to 350 degrees. Line a large sheet pan with parchment and set aside.
      2. In a small skillet, melt butter over medium heat. Add the onion and sauté for 5-7 minutes or until soft and translucent. Add garlic and sauté for another minute. Remove from heat to cool.
      3. In a medium mixing bowl, combine, dry spinach, pork rind crumbs, cooled onion and garlic and the next 8 ingredients. Mix well to combine and let mixture rest in the fridge for 5-10 minutes.
      4. Using a small scoop, divide out the mixture into 16 portions and use your hands form each portion into a ball. Place balls on the lined cookie sheet about an inch apart and bake for 15-20 minutes or until golden. Remove from the sheet pan and place on paper towels to cool. Serve warm or at room temperature.

    1. If using fresh spinach: Wash first and then blanch using boiling water or wilt in the microwave. Let it cool and place into a sieve or colander. Using a fork squeeze out as much moisture as you can. We are not looking for a wet spinach. Chop roughly.If using frozen spinach: Allow to defrost completley before placing into a sieve or colander and using a fork squeeze out as much moisture as you can.     2. In a small dish or mug place 2 teaspoons of the weighed Parmesan and 2 teaspoons of the weighedpanko breadcrumbs with a pinch of salt. Place to one side.
    3. In a bowl place spinach, parmesan, mozzarella, breadcrumbs, beaten egg, garlic powder and 1 teaspoon of salt. Mix well using a wooden spoon or electric hand blender.
    4. Here comes the messy part. Scoop out the mixture bit by bit, roll into balls and then roll them into the panko/parmesan mixure you made earlier. This mixture will make 8 balls. Place each onto grease proof paper and pop in to the fridge for 30 minutes.
