1. Rinse dried black eyed peas and pick them over to remove debris.
2. Press the Saute button of your Instant Pot. Add 2 tablespoons of oil or veggie broth/water if you cook without oil. Once hot, add chopped onions, green bell pepper, celery, and minced garlic. Saute until the vegetables soften, about 5 minutes, stirring to prevent sticking and adding more liquid if needed.
3. Mix in tomato paste, smoked paprika, thyme, cayenne, liquid smoke (if using), and salt (omit salt if using Better Than Bouillon vegetable stock). Add rinsed black eyed peas and water or veggie broth. Press Cancel.
4. Lock the lid in place, making sure that the vent lever is set to pressure. Press the Manual button and set the timer for 20 minutes. It will take about 10 minutes for the pressure to build.
