Coming up with low carb pumpkin cookies was just the natural next step for my pumpkin obsession, don’t you think? This healthy pumpkin cookies recipe is made with nutritious ingredients (like almond flour and real pumpkin puree!), are low in carbs (3 grams net carbs per cookie!), and gluten-free, which means just about anyone can eat them.
Mix in almond flour, cinnamon, nutmeg, baking powder, and sea salt, until a uniform cookie dough forms. TIP: These are soft pumpkin cookies. If you want them extra chewy, add 1/2 tsp xanthan gum (optional). I do recommend this for the best texture if you’re okay with using it! Scoop the healthy pumpkin cookies.
Almond flour is the best flour to be used in these Keto pumpkin cookies because it’s moist, has protein and is low in carbs. Coconut flour is not as good as almond flour in these cookies and they don’t come out quite as soft. It’s a much drier flour and it sucks up all of the moisture so you definitely would not get the same soft texture.
The deep flavors of molasses, cinnamon, ginger, allspice and nutmeg make these wholesome pumpkin cookies delicious without the addition of butter--and they lend themselves beautifully to the inclusion of whole-wheat flour. They are also the perfect texture for a sandwich cookie--fill them with a slightly sweetened cream cheese frosting.
