To create the base of the bread, we'll blend or smash the persimmons to create a persimmon puree. Then add all the wet ingredients to a large mixing bowl and stir. Mix the dry ingredients into the persimmon mixture, and bake in a prepared loaf pan for 50 to 60 minutes. Let cool on a wire rack for 5 minutes before removing the loaf from the pan.
The recipe is also 100% vegan as it contains no eggs. Set your oven to 200 degrees Celcius and lining a loaf tin with oiled parchment paper. Add all dry ingredients into a mixing bowl and whisk; almond flour, coconut flour, flaxseed, whole psyllium husk, baking powder, and salt.
Another variation is to add dried fruit to your bread; chopped dates, currents, cranberries, raisins or a mix of your favorite combination of fruits. For this recipe I used hachiya persimmons.
