Vegan Laksa Soup or Curry Laksa or Malaysian Laksa Lemak is a spicy noodle soup from Malaysia that has a rich creamy base made from coconut milk and topped with noodles, blanched vegetables and fried Tofu. The soup is spicy, sweet, salty and creamy.
In a wide bottomed saucepan, heat 2 tbsp oil and add the onions, sayte till translucent and then add the baby corn, broccoli and fry for a minute. Then add the tofu cubes, mix and stir for another minute. Next add the laksa paste and mix till they blend in. Add coconut milk, jaggery, salt and mix well. Add a bit of water if required.
Then add the stock, kefir lime leaves, chicken, shrimp, coconut milk, and the rest of the ingredients according to the recipe. Other traditional things to toss into the Laksa Soup are fried puffy tofu, and fish balls. Feel free to add veggies into the mix.
The basic laksa is sometimes called curry laksa. The most popular curry laksas include a paste made up of shallots, garlic, turmeric, lemongrass, candlenut or cashew, and galangal. Coconut cream or coconut milk, stock or broth, lime juice, and bean sprouts balance the bold paste along with chicken, shrimp, or tofu, or some combination thereof.
