1. Add cauliflower to stockpot and cover with water. Boil over high heat until tender.
2. For a strong garlic flavor, leave the garlic raw and add it straight to the blender. For a milder garlic flavor, gently sauté garlic in small pan until fragrant. Add tablespoon of water, if garlic starts to stick. Cook only until garlic is fragrant or starting to brown on the edges, do not overcook or burn. Or, you can add the garlic to the boiling cauliflower in the last 5 minutes before you drain it, to cook it up a bit and take the raw taste out.
3. Drain cauliflower and add to blender, along with sautéed garlic, almond milk and salt and pepper. Blend for about 60 seconds, or until completely pureed and smooth. Taste and add additional salt and/or pepper, as needed.
4. Serve tossed with pasta (fettuccini, linguini, macaroni, rigatoni are all good options). Top pasta with (or serve as a side) steamed broccoli, sweet green peas and/or sautéed mushrooms.

1. Add pasta to a large pot of boiling, well-salted water and cook according to package instructions. Drain and cover to prevent drying.
2. Meanwhile, heat a large skillet over medium heat. Once hot, add olive oil and garlic, stirring quickly to ensure it doesn’t burn.
3. Next, reduce heat slightly and add arrowroot or flour and whisk to combine. Cook for about a minute and then add almond milk 1/4 cup at a time (as original recipe is written, 1 3/4 cups total, working up to 2 cups later on if needed // adjust if altering batch size) and whisk to prevent clumps. Cook for 2 minutes.
4. Transfer to a blender and add salt, pepper, vegan parmesan cheese, nutritional yeast, garlic powder, and blend on high until creamy and smooth, scraping down sides as needed. Taste and adjust seasonings as needed - you want it to be pretty cheesy and salty so don't be shy.
