1. Place flour and sugar in a large saucepan over medium heat. Cook, stirring constantly, for 30 seconds.
2. Place butter in a bowl and use either a handheld beater or stand mixer (with whisk attachment) to beat for 3 minutes until it's smooth and changes from yellow to very pale yellow, almost white.
3. Beat in the cocoa powder at the end, just until mixed through.
4. Use it like any other frosting on cakes and cupcakes - either spread it on with a knife or put in a piping bag. You can pipe sky-high mounds and it will hold its form, as pictured on Vanilla Cupcakes in this post.

1. Place the butter in the bowl of a stand mixer. With a whisk attachment, whip the butter until it's creamy and white in color - about 3 - 5 minutes on high speed (not maximum speed).
2. Add the salt, cream and vanilla, and whisk further until the butter-cream mix is light and fluffy (for a few minutes).
3. Lower the speed and add 8 oz of the confectioner's sugar - a little at a time, and incorporate all the sugar into the butter. Make sure to scrape the sides as you go.
4. Once the sugar is incorporated into the butter, increase the speed and whisk on high for 1 minute. Taste and add the rest of the confectioner's sugar if needed. Whisk for a further 2 - 3 minutes until you have a light, fluffy, soft, spreadable frosting.

1. With a handheld or stand mixer fitted with a paddle attachment, beat the butter on medium speed until creamy, about 2 minutes. Add 4 and 1/2 cups confectioners’ sugar, the heavy cream, and vanilla extract. Beat on low speed for 30 seconds, then increase to medium-high speed and beat for 2 full minutes. Taste. Add a pinch of salt if frosting is too sweet. I always add 1/8 teaspoon.
2. You can control the consistency at this point– add up to 1/2 cup more confectioners’ sugar if frosting is too thin or more heavy cream if frosting is too thick (add only 1 Tablespoon at a time, beat together, then taste and add more if desired).
3. Use immediately or cover tightly and store for up to 1 week in the refrigerator or up to 3 months in the freezer. After freezing, thaw in the refrigerator then beat the frosting on medium speed for a few seconds so it’s creamy again. After thawing or refrigerating, beating in a splash of heavy cream or milk will help thin the frosting out again, if needed.
