Take a pan heat it on medium flame and add the sooji, stirr fry it untill it turns golden brown. Take oil in a pan and heat it over moderate flame. Once the oil is sufficiently hot, add mustard seeds, cumin seeds, green chilies, chopped ginger, red chilies, chana dal and urad dal. Keep stirring all these ingredients. To make it more flavoursome, you can replace oil with some ghee, this adds a rich aroma and taste of ghee.
2. After few minutes, add curry leaves and stir the mixture. Curry leaves will add a nice aroma to this dish. Add onions and potato in the pan. Saute the onions till they turn slightly pinkish in hue. Then add tomato, carrot and capsicum pieces to it and stir well.
3. Add salt to taste followed by 250ml of water. Put a lid on it and allow the vegetables to cook on low-medium flame. Take another pan and add sooji in it. Roast it for 2-3 minutes. Once the veggies are cooked, see if you need some more water. If you feel a little bit of water would be required, then add some water to the vegetable gravy and bring it to boil.
4. Then add the roasted sooji. Do not pour the sooji at one go. Just keep on adding little quantity and simultaneously stir the contents so that the rawa or the sooji mixes evenly. Let the rawa cook for five minutes on a low flame. Now transfer the contents into a bowl. Garnish the upma with roasted peanuts and serve hot with coconut chutney or sambar.

3. Add enough water in the pan and season well with salt. Cover the pan with a lid and cook over medium flame. Cook till the vegetables are cooked and a thick gravy is formed. Now, take a non-stick and roast semolina over medium flame for a minute or two.
4. When vegetables are cooked, gradually add roasted semolina in little quantity, stir simultaneously. Keep stirring constantly and ensure there are no lumps formed. Cook for five minutes on a low flame and then transfer it to a serving bowl. Garnish with mint leaves and cashews. Serve warm.
