1. Cook rice according to package directions, omitting the butter and seasonings. Once rice is cooked, rinse under cold water, drain well and place in a medium bowl.
2. Add remaining salad ingredients to bowl and stir to combine.
3. To make the vinaigrette, combine all of the ingredients in a small jar or a container with a tight fitting lid. Cover and shake vigorously for 30-45 seconds, until well mixed and the sugar is dissolved.
4. Pour vinaigrette over salad and toss to combine.

1. Prepare the Uncle Ben's® Long Grain and Wild Rice according to the package directions. Set aside to cool while you prepare remaining ingredients.
2. In a large mixing bowl combine Greek yogurt, mayonnaise, lemon juice, zest, salt, and pepper. Mix well to combine. Add celery, dried cranberries, green onion, and cooked and cooled rice, stirring to combine. Fold in cooked, chopped chicken and slivered almonds and mix until well combined.
3. Store chicken salad in an airtight container in the refrigerator. Keeps well for 4 or 5 days.
4. Delicious on its own or rolled into wraps with your choice of toppings.
