Whip the heavy cream to stiff peaks. Pour the cold heavy whipping cream into a large mixing bowl and beat with an electric hand mixer until stiff peaks form. Add the condensed milk. Now add the sweetened condensed milk to the bowl and beat again for about 1-2 minutes on high. Add the ube and vanilla flavoring.
TIP: If you prefer to lighten up the calories in low carb ice cream, you can replace some of the heavy cream with unsweetened coconut milk or almond milk. See the notes at the bottom of the recipe card for details. Store this low carb ice cream recipe just as you would any other ice cream – in the freezer.
For every 1 cup of the thick ube paste, whisk 1 cup of chilled whipping cream until stiff peaks, and fold in the ube paste. Freeze the base in a freezer safe container until it hardens (a few hours), and then you can enjoy your no churn ube ice cream. I personally prefer churned ube ice cream made with an ice cream machine.
