1. Place water in a saucepan over high heat. Once it comes to a boil, add tea-leaves or tea bag and cardamom. Reduce the heat to medium and gently allow this to simmer for a minute or two.
2. Add the milk and raise the heat back to high.
3. As it begins to boil, the chai will rise in the saucepan. Remove the pan from heat before it reaches the top of the saucepan. Do this a few times to really develop the flavor while using a ladle to scoop and pour back the chai. Alternately, once it comes to a boil, lower the heat and allow it to simmer to desired strength (~3-5 minutes).
4. Pour this chai through a small sieve into your favorite cups and sweeten using sugar or honey.

2. Turn off the heat, add the black tea bags, replace the lid and let the tea steep for 4-5 minutes. Pour the tea into a bowl through a fine mesh strainer or colander.
3. Whisk the vanilla, honey, and turmeric into the tea. Taste and adjust the sweetness or other spices, if desired. This Golden Chai tea mix can be refrigerated and saved in the refrigerator for a few days.
4. To make each drink, heat 8oz. of milk (stove top, microwave, or steamer) and combine with 8oz. of the hot golden chai tea mix. Make sure to stir the Golden Chai tea mix just before combining with the milk. Serve while hot.

1. To make mix, add all spices to a small jar and shake or stir thoroughly to combine. Will keep at room temperature up to 3 months. Or you can store it in the refrigerator if you prefer. Double the recipe if you intend to use it daily (it goes fast!).
2. To make a HOT chai latte, add suggested amount of Chai Mix, sweetener of choice, and 2 tsp water to a mug (or small blender). Use a spoon to mix spices into water (or skip this step if blending). Then add warmed dairy-free milk of choice to your mug (or blender) and stir (or blend) to combine. The spice mix can settle to the bottom, but blending really helps! Keep a spoon handy to give it a stir when drinking if the spices need to be dispersed.
3. To make an ICED chai latte, add suggested amount of Chai Mix, sweetener of choice, and 2 tsp water to a serving glass. Use a spoon to mix into a loose paste (you want as few clumps as possible). Then add several big ice cubes and top with dairy-free milk of choice. Stir to combine.
