Turkey Croquettes are a perfect way to use your leftover turkey! In a large bowl, mash potatoes with 1/4 cup broth, salt and pepper. Set aside. Saute garlic, and onions in oil over low heat. Add parsley, salt and pepper and cook until soft, about 2-3 minutes. Add turkey, and remaining broth, mix well and shut heat off.
In a large mixing bowl, combine sauce with the ground turkey. Chill thoroughly. With wet hands, shape mixture into balls. Roll balls one at a time in bread crumbs. Lightly shape balls into cones. For each croquette, dip it into the mixture of egg and water, then roll in bread crumbs. Again, dip croquette in egg/flour and roll in bread crumbs.
So rather than give up sausage patties, I created this low carb turkey breakfast sausage patties recipe. It’s tasty and I feel a lot better about what I’m eating. The best part is that you can make large batches of these and freeze them. Either before you cook them or after. Either way.
