Calories: 136 per servingCategory: Main Course, Soup1. Place a large stock pot over medium heat. Add the onion wedges, ginger, garlic, cinnamon, star anise, cloves, cardamom, and coconut oil. Sauté the onions and spices for about 10 minutes, stirring to brown the onions on all sides.
2. Pour in the water, beef broth, fish sauce, and sugar. Bring to a simmer. Then lower the heat if needed, and simmer for at least 60 minutes. (P.S. Fish sauce has a funky aroma, but tastes amazing! Don't skip it.)
3. Meanwhile, flash-freeze the flank steak for 30 minutes. It should be frozen on the outside, yet still mostly thawed on the inside. Then slice the steak against the grain into paper-thin pieces.
4. Use a skimmer to pull all the onions, and spices out of the broth. Then arrange the mung bean sprouts, sliced jalapeno, lime wedges and basil on a serving plate.

Estimated Reading Time: 5 mins1. The secret of making good soup is having good broth. Start by putting all the stock ingredients in a large pot. This means adding beef bones, onion, leek, ginger, garlic, star anise, cinnamon and salt in the pot. Add water and bring to boil.
2. Simmer this for 2-3 hours on low heat. When the broth has been reduced in half, just enough to make 2 bowls of soup, remove from the stove. Strain and discard the bones and vegetables. The broth should be clear without any solid residues. Put the broth back into the pot and keep it on low-heat.
3. Cut raw beef into thin slices. Chop green onions. Shred the zucchini to make zucchini noodles using a spiralizer. Slice mushroom (if using).
4. If you use mushroom in this recipe, add mushroom back into the broth pot and cook for a few minutes on low heat.
