Total Time: 30 minsCategory: Main DishCalories: 413 per serving1. Combine the apple cider vinegar, tamari, bay leaves, minced garlic, salt and pepper in a bowl and add the chicken. Marinade the chicken for 30 minutes in the fridge, if desired (I recommend it but it's not necessary).
2. Transfer the chicken and marinade to a large frying pan and cook over medium heat, slightly covered, for about 20 minutes.* The liquid should come to a boil. Flip the chicken halfway through the cook time.
3. As the chicken cooks, heat the olive oil in a separate frying pan over medium heat, then add the sliced yellow onion and sauté for about 5 minutes. Add the remaining minced garlic (about 3 cloves) and cook for 1-2 minutes before adding the green beans. Cook the green beans for about 10 minutes, then remove from heat.
4. Remove the chicken from the marinade and set on a plate. Pour the cooked marinade into a bowl and set aside. Melt the coconut oil in the frying pan over medium heat, then place the chicken thighs in the pan to brown, about 5 minutes per side.

Rating: 5/5(40)
Total Time: 30 minsCategory: DinnerCalories: 303 per serving1. Place the soy sauce, rice vinegar and the 4 minced garlic cloves in a bowl. Add the chicken and mix it around a little so that the chicken is well coated with the marinade. Leave the bowl in your fridge for 30 minutes to 24 hours to marinate.
2. Pour the marinade from the bowl into a medium-sized pot. Heat a large frying pan over high heat and add the oil. Remove the chicken thighs from the bowl, dry them thoroughly with paper towels, and then fry them in the pan until they are nicely browned. You don’t need to cook them through, just brown them.
3. Once the chicken is brown, add it to the pot with the reserved marinade along with the whole garlic cloves, black pepper and bay leaves. Add just enough water to the pot so that the chicken is half covered in liquid. Bring the pot to a boil, cover and reduce the heat to low so the chicken gently simmers. Let the chicken cook for 20 minutes. After 20 minutes sprinkle the coconut sugar over the chicken and continue to cook it, uncovered, for 5 more minutes, or until the sauce has thickened.
4. Serve the chicken with some rice and lightly steamed greens on the side.
