2. Let the tomatoes and chilies cool. Peel the tomatoes; chop both the tomatoes and chilies into small pieces. Reserve all the tomato juice.
3. Heat oil in a pan, add the mustard and fenugreek seeds. Once the seeds start to splutter, add the grated ginger and sliced garlic.
4. Cook till the garlic is lightly browned all over.

3. When they have cooked a total of 10 minutes (5 minutes after rotating), begin to mush the tomatoes with a spoon so that they become a sauce. Stir every couple of minutes to prevent them from sticking to the pan.
4. Once they have been cooking for 15 minutes all together (5 minutes after mushing), turn the heat down to low and let simmer for the remaining 5 minutes.
