1. Cream together butter and sugar in a large bowl or mixer. 3-4 minutes, or until fluffy and lightened in color.
2. Mix in egg and vanilla extract and beat until incorporated, then gradually mix in flour and salt, if using, until dough comes together. If too dry, add 1 teaspoon water at a time until dough is smooth.
3. Lay out 2 large pieces of plastic wrap on your workstation, then divide dough in half and place each half on a piece of plastic wrap.
4. Roll each dough half into a long log, then wrap tightly in plastic wrap. Refrigerate for at least 2 hours, or until dough is firm and chilled.
