1. Crumble all of the bread together and mix well. Add in chopped sage, celery, onion and garlic and mushrooms if using. Season with salt and pepper. Taste for seasoning.
2. Pour mixture into a 13×9 dish or other large pan and press down firmly. Let sit overnight if you have the time.
3. Pour enough chicken stock over the dressing to make a squishy, homogeneous mass. Let sit for at least an hour, overnight in the fridge is better.
4. Check for moistness and seasoning and add more stock if needed. Bake in a moderate oven, 350-400 degrees, until edges are brown, top is crisp and dressing is hot all the way through. About an hour.

1. Tear cornbread into pieces.
2. Put the cornbread and croutons into large bowl. You'll need to find a bowl bigger than your head. I have a 16 inch graniteware bowl that is perfect for making dressing.
3. Cook onions and celery in olive oil until tender. Add to bowl along with sage.
4. Add stock and stir well. Add one teaspoon of black pepper, stir and adjust as needed. I rarely need to add additional salt. Let dressing sit for 30 minutes to absorb all the liquid. Stir and pour into greased baking pans. I used 2 (8 x 8) aluminum pans instead of 1 (9 x 13) pan because I want to freeze the dressing for use at a later date. One 8 x 8 pan fits nicely inside a gallon freezer bag for storage. Bake at 350 for 45 minutes or until the top has browned.
