1. Preheat oven to 350 degrees.Mix sugar, shortening, molasses, and egg together until well combined.
2. Dump in dry ingredients, stirring dry ingredients together lightly.
3. Mix together until dough is combined. In your hands roll dough into walnut-sized balls, then generously coat each ball with sugar.
4. Place balls on a baking sheet and bake for 9 to 11 minutes, allowing to bake for about a minute after cookies begin to crack.Remove cookies from baking sheet and allow to cool…though these are delicious while still warm.Fun variation: drizzle melted white chocolate in decorative stripes over the top of each cookie.

2. MIX THE WET INGREDIENTS: In a large mixing bowl, whisk together the nut butter, softened coconut oil, molasses, maple syrup and vanilla until smooth.
3. STIR IN THE DRY INGREDIENTS: Add the almond flour, coconut flour, baking soda, ginger, cinnamon, cloves, allspice, salt and stir well until combined.
4. CHILL DOUGH: If the dough seems too soft (this could result if you used melted coconut oil), you can cover the bowl and chill in the freezer for at least 15 minutes. I do not usually have to chill mine.
