Slow Cooker Charro Beans are flavored with bacon, garlic, tomatoes, green chiles, jalapeños, cilantro, and spices...a perfect side dish for Mexican food! A few days ago I shared my recipe for King Ranch Chicken Casserole, which just so happens to be one of my family's very favorite comfort food classics.
Slow Cooker Charro Beans: Sauté bacon, chorizo, onion and garlic in a pan and add to slow cooker with ham, diced tomatoes, peppers, cilantro, oregano, paprika, cumin, dry pinto beans, and 6 cups of chicken broth. Cook on low for 8-10 hours or on high for 4-5 hours until beans are tender. Taste and season with salt and pepper as needed.
If you want to thicken your charro beans, you can combine 2 tablespoons of corn starch with 1/4 cup of cold water and mix well before adding it to the pot. Serve hot as a side dish or on its own. Food Chopper: When you are going to chop up a lot of vegetables like you do for the pico de gallo that you serve with these charro beans, it is helpful to have a food chopper like this one on hand. It seriously makes everything so much easier! Pinto Beans: You are going to need a lot of pinto beans to make this recipe.
