When I first moved out of home, I learned how to make it from scratch and LOVED the simplicity of it. It was also one of the very first recipes I recreated to be low carb. I’ve been meaning to share a keto gnocchi recipe for quite some time. This has been my go-to for years now, and I can’t believe how much it tastes like actual gnocchi.

Add in the bay leaf, pepper, salt, and chicken broth. Cover and cook on LOW for 4 hours, or until chicken is tender. Alternately, you can also cook on HIGH for about 2-3 hours. (I do feel that chicken turns out better in the slow cooker when cooked on low though). Remove chicken and place on a cutting board. Turn the slow cooker to high.
