Tartine Basic Country Bread Tartine Country Bread is pretty much the holy grail of sourdough bread, ever since Chad Robertson released his book, Tartine Bread. It has been an inspiration for artisan bread bakers who work hard to make gorgeous loaves with an amazing flavor.
Pour 700 grams of 80' water into a large mixing bowl. Add the 200 grams levain and mix to disperse. Add 900 grams white bread flour and 100 grams whole wheat bread flour and mix thoroughly by hand until no dry flour remains. (The dough scraper is helpful to remove dough from your hands after mixing).
I know for sure it can't be any less, but it's probably more. On to the entry. Another Sunday, another pair of Tartine sourdough country loaves shaped and proofing. My family has come to expect this bread to be on hand during the week, and in the rare case where we have to buy some bread from the grocery store, we are always disappointed.
