Calories: 110 per servingTotal Time: 23 hrs 45 mins1. To make the dough: In a large bowl or the bowl of a stand mixer, stir together the starter, water, and 3 cups (360g) of the flour. Beat vigorously for 1 minute. , Cover and let rest at room temperature for 4 hours. Refrigerate overnight, or for about 12 hours. The dough will have expanded in size and become more relaxed after its overnight rest., Add the remaining 2 cups (240g) flour and the salt. Stir to thoroughly combine, then knead (by hand, or with a stand mixer equipped with the dough hook) to form a smooth dough. , Allow the dough to rise in a covered bowl until it's light and airy, with visible gas bubbles. Depending on the vigor of your starter and the temperature of your kitchen, this may take up to 5 hours (or even longer). For best results, gently deflate the dough once an hour by turning it out onto a lightly floured or lightly greased work surface; stretching and folding the edges into the center; turning it over, then returning it to the bowl. Adding these folds will hel
2. Place the bâtards on a lightly greased or parchment-lined baking sheet.
3. Cover and let rise until very puffy, about 2 to 4 hours (or longer; give them sufficient time to become noticeably puffy). Don't worry if the loaves spread more than they rise; they'll pick up once they hit the oven's heat. Toward the end of the rising time, preheat the oven to 425°F.
4. Spray the bâtards with lukewarm water; this will help them rise in the oven by keeping their crust soft and pliable initially. For an extra-crusty crust add steam to your oven: see details in “tips,” below.

Total Time: 27 hrs 15 minsCategory: BreadsCalories: 132 per serving1. In large bowl, combine the starter, water, and 3 cups of flour. Beat vigorously with wooden spoon for 1 minute. Cover with plastic wrap and let rest at room temperature for 2-3 hours. Refrigerate overnight.
2. The next day, remove the dough from the refrigerator and allow to come to room temperature, about an hour. In large mixing bowl, with kneading hook attachment, combine the starter with the remaining 2 cups flour, sugar, and salt. Begin mixing at a low speed, adding up to 1/4 cups water as needed to make a smooth dough. Continue kneading for 5-7 minutes. Transfer dough to a large greased bowl and cover with plastic wrap. Allow the dough to rise until it has doubled. (This may take 2-3 hours). Remove the dough at each hour interval to stretch and fold the dough, envelope-style to work the gluten in the dough. The dough will most likely be sticky. Use a stainless bench scraper to lift the dough from the work space.
3. Once the dough has doubled, divide the dough in half. Stretch and fold the dough, envelope-style, again using the bench scraper as needed. Form each into a ball. Cover and allow the dough to rest for 30 minutes.
4. Flatten each ball into an oblong shape. Stretch and twist, and then fold the dough, envelope-style. Form a nice smooth ball, pinching on the bottom. Slide the bottom of the dough against your work surface to seal the seam.
