    2. Using a spatula mix and break down the tamarind paste continuously for about 5 – 10 minutes, adding 1/4 cup water every 1 to 2 minutes until it turns into a smooth sauce. Be careful that it doesn’t splatter.
    3. When ready, turn off the stove, remove the pot and immediately strain it through a sieve using a heat proof bowl. If using a small sieve, split it in portions at a time that is a workable size (I split the tamarind mixture in three portions for straining through a sieve). Cover and set aside.
    4. Next in the same pot (no need to wash the pot), melt the butter on medium-low heat, add salt, pepper and Worcestershire sauce. Mix and let it simmer for 1 to 2 minutes.

    6. Stir with a fork to break up tamarind paste and let stand for 15 minutes to soften further.
    7. Working in batches, use the back of a large spoon to press tamarind mixture through a fine mesh strainer.
    8. Don't forget to scrape the tamarind purée at the bottom of your strainer into bowl as well! You should have about 1 tablespoon of tamarind purée and consistency should be similar to Sriracha.
