2. Add in the chopped large tomatoes and the peppers and sauté until they begin to soften and break apart.
3. Add the cherry tomatoes and continue to stir until these begin to soften too.
4. Add the stock and reduce the heat to a medium heat. Stir regularly as the sauce begins to reduce and thicken, becoming more like a thick tomato sauce. If the water evaporates before you think the tomatoes have reduced properly, simply add a bit more water.
