1. Heat a heavy based pan over a medium heat, spritz with low calorie cooking spray, and add the onion and garlic. Gently fry for 2 minutes or until onions have softened.
2. Add the chicken to the pan, and continue to cook for around 5 minutes or until the chicken is sealed and starting to brown.
3. Add the mushrooms, mange tout, and frozen peas, and cook for a further 3 minutes.
4. Meanwhile, cook the rice according to packet instructions and drain any excess water. Add the rice and soy sauce to the pan and stir well. Crack the egg into the pan, and allow to cook for around 30 seconds. Then, stir everything well whilst continuing to cook for around 1 minute, or until the egg is cooked to your liking.
