Swig Cookies are all the rage in Utah and now you can make them at home! Cold, rich, buttery cookies topped with flavored, creamy frostings. These popular cookies originated in Utah at Swig Soda Run shops. Their signature cookie is a cold, rough-edged, sugar cookie topped with a glorious sweet pink frosting.
Swig Chocolate Cookies 1 c. butter, softened 3/4 c. vegetable oil 1 3/4 c. sugar 3/4 c. powdered sugar 2 Tbsp. water 2 eggs 4 c. flour 3/4 c. cocoa powder 1/2 tsp. baking soda 1/2 tsp. cream of tartar 1 tsp. salt *extra sugar for pressing cookies
Once cookies are at room temperature, transfer to airtight containers, stacking as needed with parchment or wax paper in between. Refrigerate until completely chilled (30 minutes to 1 hour) or freeze for up to 3 months. When ready to serve, frost and enjoy! So, the traditional swig sugar cookies are served cold.
Modeled after the beloved swig sugar cookie (which also has a few amazing cousins already: the lemon version and the ultra chocolate version), this peanut butter chocolate version is absolutely fantastic.
