1. You can use any method of popping popcorn for this recipe. My favorite way is air-popping, since it has no added oil or butter. You can also use microwave popcorn, but I suggest buying reduced fat, less butter, or the 100 calorie bags (regular microwave popcorn is NOT skinny).
2. Measure out 2 cups of popcorn and make sure you pick out any kernels.
3. Toss with melted coconut oil or butter spread (if you're using air-popped or freshly popped popcorn). Omit this step if you're using microwave popcorn that has butter flavoring.
4. Sprinkle abut 1/2 to 1 packet of splenda over your popcorn, to taste. You can also use your favorite sweetener in place of the splenda.

1. Heat the olive oil and two popcorn kernels in a saucepan on medium heat. Cover the saucepan and wait for the kernels to pop. This can take several minutes and that's ok. Be patient. When they pop, you know you're ready to go!
2. Add the rest of the kernels into the pot and sprinkle the sugar on top. Quickly stir everything together and replace the lid.
3. Shake the pot occasionally before the popping starts, then at regular intervals when it's popping to ensure all the kernels are popping and they don't burn.
4. When the popping stops, remove from heat, pour into a bowl, sprinkle with salt (start with a pinch, taste, and add more if desired) and serve.

1. In a large pot (or whirly pop) add coconut oil and 3 popcorn kernels and turn on medium-high heat. Once the 3 kernels have popped, the oil is hot enough to continue.
2. In a small bowl, add remaining popcorn kernels, sugar and salt and mix together. Add to pot. Shake pot every few seconds (or turn the handle if using a whirly pot) to ensure kernels don't burn and continue until popcorn is popped (about 3 minutes).
3. Immediately remove from heat and spread out on foil or a flat surface to dry and cool for a couple minutes.
