1. Stir flour, almonds, ginger, cinnamon, nutmeg, baking soda, baking powder and salt in a large bowl. Heat the honey and butter in a small saucepan over low heat until the butter completely melts. Pour butter into the flour mixture along with the lemon zest. Mix well until the dough forms into a solid ball. It’ll be soft and sticky, but will hold its shape. Cover the bowl with a kitchen towel (so dough doesn’t dry out) and leave to cool.
2. Using your hands, roll dough into 18 balls and place all on a baking sheet lined with parchment paper, leaving some room between the cookies for when they bake and expand. Flatten each ball slightly with your fingers. Bake cookies for 10-15 mins, until they puff up and get golden brown on the bottom. (Make sure they’re not burnt at the bottom!) Remove from oven, transfer to a wire rack and cool completely.
3. Let cookies dry completely, then store in an airtight container at room temperature for 1-2 weeks. Maybe longer, but they never last that long in my home.

1. In a food processor, using the S blade attachment, add the dry ingredients: almond flour, coconut flour, erythritol, and salt. Blend on high speed to combine evenly - about 30 seconds. This speed will also pulse the erythritol into a thinner texture, so don't skip this step.
2. Stop the food processor, add the soft cubes of butter, soft cream cheese, vanilla, and almond extract.
3. Process again on medium speed until the dough forms large crumbles of dough you can easily squeeze and bring together into a dough ball. If it's too wet, add an extra tablespoon of almond flour, or if your dough is too dry, add an extra teaspoon of soft cream cheese processing after any addition. The cookie dough should be soft, buttery, and easy to gather into a ball. It shouldn't be overly wet or dry.
4. Place the dough into a plastic bag or wrap the ball into plastic wrap. Flatten into a thick disc and refrigerate for 20 minutes or overnight.
