1. Preheat oven to 350 degrees. Lightly spray the bottom of an 8 x 8 inch baking pan with non-stick cooking spray.
2. Combine melted butter and graham cracker crumbs in a medium bowl. Stir until well blended and pack into the bottom of the prepared baking pan. Bake for 8 minutes.
3. Pour sugar free sweetened condensed milk over the crumbs evenly. Add the chocolate chips, coconut and walnuts. Press gently with your fingers on top of all the ingredients. Bake for 20-25 minutes or until light golden brown. Cool and place in refrigerator before cutting.

3. Stir in the remaining ingredients, one at a time. Then use a teaspoon to scoop the batter and drop it onto the prepped cookie sheet from the first step. This should harden at room temperature within 45 minutes. Store the cookies in your refrigerator or freeze to take with you later on.
