1. Heat butter or oil, over medium heat, add apple slices and saute for 6 minutes.
2. Mix the cold water and cornstarch, set aside.
3. To the apples, add the sugar, cinnamon, vanilla and water mixture, and stir to combine. Continue cooking at a gentle boil for 2 – 3 minutes, stirring occasionally, until apples are fork tender. Let cool a few minutes before serving.
4. Pair with non-dairy ice cream or serve topped on cinnamon oatmeal, waffles, french toast or pancakes. Or simply enjoy as is!

2. Place a medium skillet onto medium-low heat and add water. Add apples and cinnamon to taste, stirring and cooking until apples are softened, about 6-10 minutes. If all of the water evaporates, add a little more water as the apples cook.
3. Add cooked apples to serving bowls and top each serving with a scoop of vanilla ice cream or a dollop of freshly whipped cream, plus a tablespoon of chopped nuts if desired.
4. Store leftover apples in the refrigerator for up to 4 days and reheat in the microwave for 20 seconds, or stir them into oatmeal or vanilla/plain yogurt– no need to reheat!
