1. Preheat your oven to 425 degrees with the oven rack in the middle. Line a baking sheet with parchment paper.
2. Rub the potato with olive oil until it is well coated and sprinkle with salt and transfer to the parchment lined baking sheet. Roast the potato whole (don’t poke any holes in it) until it is soft when you squeeze it with your hand. The baking time will depend on the size of your potato, but usually 45 minutes – 1 hour.
3. When you take the baked potato out of the oven, drop it onto a plate or cutting board from 10″ up. By dropping it, you loosen the inside of the potato so it is light and fluffy inside when you cut into it.
4. Cut a slit down the length of the baked potato, pinch the edges together to make the opening bigger, and fill the baked potato with desired amount of the fillings.

1. Heat oven to 450 degrees and line a baking sheet with aluminum foil.
2. Using a fork, poke the potatoes multiple times on all sides, place on the baking sheet, and bake for 25 minutes, then remove from oven.
3. Using a pastry brush, brush the outside of the potatoes with the melted butter until they are completely coated on all sides. Sprinkle the potatoes with a generous amount of kosher salt, then place the potatoes back on the baking sheet upside down so they cook evenly on both sides.
4. Return potatoes to the oven and cook for an additional 20 minutes. Check for doneness by squeezing the potato with an oven mitt or paper towels. If the insides are nice and soft and give under pressure, remove the potatoes from the oven. Otherwise, continue cooking in 5-minute increments until the potatoes are done.

2. Wash and dry the potatoes and do not poke each potato once or twice with a fork. Again, do not poke any holes in the potato. Potatoes only explode when they are overcooked.
3. Pour the vegetable oil into a small dish and dip a paper towel into the oil. Rub the oil all over each potato.
4. Place the potatoes on a baking sheet. Sprinkle salt over the potatoes.
