1. Preheat an oven to 350 F. Cream the butter and sweetener together until light and fluffy in a stand mixer. Add the egg and mix until well combined. Add the almond flour and vanilla extract.
2. Chill the dough for at least 1 hour in the refrigerator.
3. Fill a standard cookie press with the dough and use the cookie press according to it’s instructions. I used the tree, square and a round stamp for my cookies. The cookies do not spread so you can place them close together on the baking sheet. Chill each tray of cookies for 5 minutes before baking.
4. Bake cookies for 8-9 minutes or until very lightly golden brown. Be sure to allow them to cool completely on the baking sheet before removing them to a cooling rack.
