DirectionsStep1Rinse and chop onions, spinach, ginger, garlic and green chillies.Step2Heat oil in a pan and add cumin seeds. When they splutter, add onions and green chilies.Step3Saute till the onions turn golden. Add ginger garlic, turmeric and salt. Saute for 2 mins.Step4Next add besan/gram flour and garam maslaa. On a low heat, saute till the flour begin to smell aromatic. The raw smell of the flour should have completely gone.Step5Then add spinach and saute till it wilts. To a blender pour 2⁄3 cups water. Add the sauteed spinach and onion mixture.Step6Make a smooth or slightly coarse puree to suit your liking.Step7Transfer this back to the same pot along with more water. (I added 11⁄4 cups in total to blend and add at this stage). You may need more.Step8Bring this to a boil and cook for 3 to 4 mins until the spinach curry smells good.Step9When the curry turns thick yet is of pouring add kasuri methi. Mix and turn off. Taste it and add more salt if needed. It will still taste slightly bland at this stage.Step10Heat ghee or butter in a small pan. Add sliced garlic and red chillies. Fry the garlic until it turns golden.Step11Add hing and pour this to the spinach curry. Give a good mix and cover it.Step12Squeeze lemon juice before serving.     1. In a small bowl, mix the besan with half cup of milk to make a lump free batter and set aside.
    2. Blend the spinach, ginger and green chilies using about 1/2 cup of milk. Spinach should not be pasty. I prefer to use food processor.
    3. Heat the ghee in a saucepan over medium high moderately. Add fenugreek seeds, and turmeric. Stir for a few seconds.
    4. Add the spinach, and milk and turn the heat to medium. Bring spinach to boil. Lower the heat to medium low and let it cook for about 15-20 minutes, stir occasionally, scraping the sides.

    4. Remove pan from heat. Stir in yogurt. Place the pan over low heat. Warm the curry for about 4 minutes, stirring continuously.
