1. Preheat your broiler
2. Place all tomatillos and jalapenos onto a dry heavy duty cookie sheet
3. Broil for 5 minutes on each side, turning once. Place the oven rack on the second spot down from the top, this gives about 5" from the heating elements. The tomatillos will get a little charred but that's ok, don't panic. Watch them closely though, do not leave them.
4. Place the roasted tomatillos, jalapenos and cilantro in your food processor (a blender will work but we have found the food processor gives a better consistency) and pulse only 5-6 times or until it is semi-smooth. You want a few small chunks so don't blend it into a liquid.

1. In a medium pot, add the tomatillos, onion, garlic, jalapeno, and vegetable broth and bring to a boil, cover, reduce heat to low and simmer for 15 minutes.
2. Let cool a few minutes and gently transfer to a blender. Add the cilantro and/or parsley and process until smooth. Taste for flavor, adding more salt as needed.
3. Makes about 6 cups
4. Leftovers can be kept in the refrigerator for up to 5 – 6 days in a covered container. For longer storage, freeze for up to 2 – 3 months. To freeze, let cool completely and store in freezer safe containers leaving 1/2 inch of head space for expansion. Let thaw in the refrigerator before using.

1. Preheat the oven to 450°F and line a baking sheet with parchment paper.
2. Remove the husks from the tomatillos and rinse under cool water to remove the stickiness. Place the tomatillos, onion and pepper on the baking sheet, drizzle with the olive oil and a generous pinch of salt and toss. Place the wrapped garlic on the pan. Roast for 15 minutes or until the tomatillos are soft.
3. Unwrap the garlic from the foil, peel it, and place in the bowl of a food processor. Add the roasted vegetables, lime juice and cilantro and pulse. If your salsa is too thick, add 1 to 2 tablespoons water to thin to desired consistency. Season to taste.
4. Serve with chips or with your favorite mexican recipe.
