1. Soak the strawberries in red wine for 10 minutes, then transfer to a heavy saucepan. Bring to a boil over medium heat. As soon as it starts to boil, add the ginger, brown sugar, cinnamon stick, chile pepper, red pepper flakes, apple cider vinegar and salt. Boil over medium heat, stirring every 10 minutes, until the preserve thickens.
2. Remove the chile pepper and cinnamon stick from the preserves. Ladle into clean 1/2 pint jars, wipe rims with a clean cloth or paper towel, and seal with new lids. Store in the refrigerator.

2. Once boiling, stir in the sugar until dissolved, return to a full boil, and cook for 1 minute.
3. Wash canning jars in hot soapy water, rinse well and dry.
4. Sterilize the jars and lids in boiling water for at least 5 minutes. Ladle the jam into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.

3. Turn the heat to medium and allow the mixture to come to a simmer, stirring frequently. The skillet will slowly fill with more liquid as it releases from the strawberries. Continue stirring the jam as it simmers until most of the liquid has evaporated or thickened up. This may take anywhere from 15-30 minutes. Keep in mind that the jam will continue to thicken once it cools.
4. Once the jam is thick, remove it from the heat. Can, freeze or store in the refrigerator for up to one month.
