1. Prep the veg, put in a very large bowl or pot.
2. Mix the salt OR salt sub with the prepped veg, then let it sit for 4 hours, then drain, rinse, drain again.
3. In a large pot, mix together everything from the vinegar down to and including the celery seed. Bring to a boil. Add the drained veg. Mix, bring back to a boil and simmer 10 minutes.
4. Put in your choice of the following jar sizes: quarter-litre (1/2 US pint / 8 oz), or half-litre (1 US pint / 16 oz).

1. This recipe makes approximately 8 cups of relish, but can easily be halved for a smaller portion.
2. Combine prepared green pepper, cucumber, and onion in a large, non-reactive pot. Stir in two cups of apple cider vinegar and bring to a simmer. Cook over medium heat for approximately 30 minutes, until the vegetables, have cooked down a bit.
3. Drain the vegetables and return to the pot. Add remaining vinegar, sugar and the spices. Bring to a simmer and cook for five minutes. Remove pot from heat.
4. Fill jars, wipe rims, apply lids and tighten bands. Process in a boiling water canner for 10 minutes (starting time when pot returns to a boil).
