Glutinous rice flour- also called sticky rice flour. This will give the kakanin its chewy texture. Sugar – To make sure that your Royal Bibingka does not become too sweet, use less if making it with sweetened macapuno. Coconut cream- use full-fat if you want it extra rich and creamy.
On this special version of Vigan Royal Bibingka I substituted some ingredients from my original recipe. I now used thick coconut cream in can instead the original coconut powder.
Prepare a baking pan lined with wax paper or pre-cut banana leaves. Brush with butter. Pour-in the bibingka mixture into the baking pan. Bake for 15 minutes. Top with grated cheese and salted egg. Bake for another 15 to 20 minutes or until golden brown. Brush with melted butter as desired and top with grated coconuts.
