2. Take a deep bowl, add gram flour (besan) along with red chilli powder, turmeric powder, garam masala powder, cumin powder, chaat masala powder, salt and cornflour. Mix all the ingredients well using a spatula and add 4-5 drops of water to blend everything together.
3. Once, the marination is ready, add okra to it and mix all the ingredient together. Set it aside. In case you want extra crunchiness, add a small portion (2 teaspoon) of roasted semolina (sooji) to it.
4. Now, take a deep wok and heat refined oil. Once the oil reaches its smoking oil, slow down the flame and add marinated okra to it. Deep fry till the pieces turn golden. Once done, place the fried okra on a tissue paper to absorb extra oil.

To begin with soak the bhindi in some water with a small pinch of salt. This will not only remove the stickiness but will also remove all adulterants. Then wash the bhindi in running cold water and drain out the excess water. Allow it to absorb the moisture.
2. Then take a clean chopping board and cut the bhindi into thin strips. Start by slitting from the centre. Then in a large glass bowl, add the sliced bhindis along with some gram flour, red chili powder, salt, mango powder, chaat masala, cumin powder. Mix all the ingredients together and mix well.
3. Take a deep bottomed fry pan and heat oil. Once the oil is hot enough, leave the bhindis from one side and shallow fry them till they turn crispy and golden. Then drain out the excess oil and place some paper towels or tissues on a plate so that the excess oil is soaked. Sprinkle chaat masala on the kurkuri bhindi and serve hot.
