Thanks to the immersion method, and the fact that water is a good conductor of heat, the temperature of the water and the temperature of the food are always effectively equal...or at least, they equalize over time. One downside of sous vide cooking is that it might take an hour to cook a steak.

The second phase is searing the meat to develop color, flavor, and textural contrast on its surface, and to help render and soften its fat.
The most common temperature and cooking time for sous vide carrots are 183°F for one hour. This is my preferred way. It works perfectly well for whole baby carrots, small tender carrots from a farmer’s market, and the big roots from a supermarket. For those large woody carrots, I’d suggest cutting them into sticks before cooking.
