1. Make the dough in the evening and let rise overnight. The following morning, roll, cut and shape the dough. Rest for 1-2 hours (second rise) before baking.
2. Transfer the dough to a medium-size bowl coated in butter. Cover with plastic wrap. Let rise overnight until double in size, about 8-12 + hrs. @ 67-68 F, depending on temperature.
3. In the morning: Line a 9-inch springform pan with parchment paper. I like to scrunch the paper into a ball first, open it up, and then line the inside with enough excess to hang over the sides for easy removal. It tends to fit better this way.
4. Combine the cinnamon, sugar and flour in a small bowl; set aside. Melt the 28 g (2 tbsp) of butter in a shallow pan or microwave. Once the butter has cooled slightly, brush the entire surface of the dough, including the top, bottom and sides. Sprinkle the dough with the cinnamon-sugar mixture leaving a 1/2-inch border around the edges. Smooth it out with your hands.

1. Add flours, sugar, and salt to bowl of a stand mixer. Stir together. Whisk egg, milk, and starter together in separate bowl until no lumps of starter remain.
2. Attach hook to mixer, and turn on on Kitchenaid speed 2, and gradually add liquid ingredients, until all dry bits are gone. When most of the flour is absorbed, turn mixer to speed 4 and knead for 30 seconds. Mixture will not look smooth, just shaggy. Let sit for 15 minutes.
3. Turn mixer onto speed 2 (using Kitchenaid Stand Mixer) and add one chunk of butter at a time to the dough, only adding another chunk once the previous is fully incorporated into the dough. Keep doing this until the butter is all added to the dough.
4. Once all the butter is in the dough, turn KitchenAid up to speed 4 and continue kneading for 7 minutes - the dough will be smooth, and cleaning the sides of the bowl. It will be slightly sticky to the touch still.
